About Domaine de Villaine Saint Aubin 1er Cru Les Perrières

The term Perrière has an origin as ancient as it is refined. It stems from the Old French perrière, derived from pierre ("stone"). In its most literal sense, it referred to a place where stone was quarried—a quarry—or terrain so rocky that the earth seemed to conceal secrets beneath a hard mineral shield. In French geography, the name Les Perrières often indicates sites with a mining or quarrying history. However, in the wine world, this word takes on a poetic nuance as it refers to vineyards situated on stony, often limestone, soils, which impart a vibrant character to the wines, marked by an unmistakable minerality.

This very character is what inspires Domaine de Villaine, one of the most revered wineries in Burgundy, France. Owned by Aubert de Villaine—yes, the same man who is also co-owner and director of the legendary Domaine de la Romanée-Conti (DRC)—this domaine has earned a place of honour for its elegance and fidelity to the terroir.

Among its treasures, Domaine de Villaine Saint-Aubin 1er Cru Les Perrières shines with its own light. A wine that, from its name, pays homage to the stone that witnessed its birth.

The Les Perrières vineyard is a mosaic of clay-limestone soils, stony slopes, and an altitude that challenges the vines. The rock surfaces, the soil is scarce, and the ripening of the grapes occurs under a certain natural tension. This combination is perfect for the chardonnay variety, which here develops a profile full of precision, freshness, and energy.

At Domaine de Villaine, the grapes are allowed to mature as much as possible to achieve balanced and flavourful bunches. The harvest is done by hand, the bunches are pressed whole, and the must rests naturally before descending by gravity into the winery.

The ageing process takes place in a mix of barrels—some new, others one to three years old—and large 500-litre casks. For 12 to 18 months, the wine rests on its lees, without bâtonnage, preserving its purity. Afterwards, it is bottled and rests for another year before reaching the market.

As a result, Domaine de Villaine Saint-Aubin 1er Cru Les Perrières is a chardonnay that, as the winery itself says, its name Les Perrières perfectly describes both the place and the wine: firm, elegant, and deeply mineral.
