Chinon (in the Loire Valley), Domaine Philippe Alliet Chinon L'Huisserie is a red wine you simply must experience. As you are aware, here at Decántalo we only endorse the crème de la crème, and it would be remiss not to include the Alliet family and their dedication to crafting this exquisite wine. The saga of this family enterprise, nestled in the village of Cravant-les-Côteaux, commenced with Claude and Philippe, who in 1983 took over the vineyards from Philippe's father. The couple rose to the challenge of extracting the finest qualities from these soils that sprawl along the Vienne River, where three distinct categories can be observed: the first, along the river, featuring alluvial terraces with gravel and sand; the second, upon the hills, where limestone and tuffeau prevail; and lastly, at the summit, with clays, flints, and sand. It is here that Domaine Philippe Alliet Chinon L'Huisserie is birthed, on a new three-hectare plot with relatively young vineyards of about 20 years of age.
Low yields and ecological practices are pivotal in cultivating grapes with intense flavors and high quality. This robustness on the palate and in the bouquet is indeed achieved in the field, yet it is imperative to preserve it at all costs within the winery, by meticulously processing the harvest. For Domaine Philippe Alliet Chinon L'Huisserie, a traditional fermentation is carried out, employing indigenous yeasts and temperature control. However, the essence of Domaine Philippe Alliet Chinon L'Huisserie lies in both the maceration process and the use of seasoned wood, from previously used barrels. These two nuances will result in a greater extraction of aromas and flavors, as well as a gentle maturation, where the wine's taste is neither masked nor overwhelmed by the nuances of new wood. Following fermentation, and to tame the vigor and distinct character intrinsic to the Cabernet Franc, Domaine Philippe Alliet Chinon L'Huisserie will spend half a year in cement vats, then it will be transferred to 500-liter barrels (where it will age for another year), and subsequently return for another six months to the concrete vats.
Today, the Alliet couple is supported by their son Philippe, the next generation of the winery.
