About Domaine Pignier Les Gauthières Trousseau
Domaine Pignier Les Gauthières Trousseau is a biodynamic red wine made by Domaine Pignier with the local Trousseau variety in the AOC Côtes du Jura (France).
The Domaine Pignier vineyards were first planted in the 13th century on the Montaigu slopes (Jura) by the Carthusian monks. Following the French revolution, the land was acquired by the Pignier family and they have been making wines with their own identity ever since. Today, it is the seventh generation who are in charge. The winery is now run by the three siblings Jean Etienne, Antoine and Marie Florence, who have gone one step further, and had all their vineyards certified by the Demeter biodynamic label and the Ecocert eco-label.
Domaine Pignier Les Gauthières Trousseau comes from a “Trousseau a la Dama” selection from a place called “Les Gauthières”. These vineyards are cultivated according to biodynamic principles and using horn manure, silica and infusion-based treatments. The yield is limited to 25hl / ha and the harvest is carried out manually in small boxes with a meticulous selection process in the vineyard.
In the winery, the Domaine Pignier Les Gauthières Trousseau grapes are destemmed and gently crushed. Spontaneous fermentation then takes place with native yeasts, following by aging for 12 months in oak barrels. No sulphur is added, it is not filtered, and it is bottled on fruit day.
Domaine Pignier Les Gauthières Trousseau is a single-varietal wine that is made with one of the most characteristic varieties in this French wine region. A very interesting fruity delight that is well worth trying.
