About Domaine Pignier Savagnin Sus Voile

Domaine Pignier Savagnin Sus Voile is a biodynamic white wine aged under a yeast cap made by Domaine Pignier in the AOC Côtes du Jura (Jura) with the Savagnin variety.

Domaine Pignier dates back to the 13th century when Carthusian monks began making wine in the town of Montaigu, in Jura (France). In 1794 the estate was acquired by the Pignier family and today the winery is in the hands of the current generation, siblings Jean-Etienne, Antoine and Marie-Florence Pignier. Deeply dedicated to natural viticulture, all vineyards are certified by Demeter and Ecocert and in the winery they make their wines under a yeast cap. These wines are typical of the area but made with minimal intervention.

Domaine Pignier Savagnin Sus Voile comes from vineyards planted on blue clay, limestone and slate soils. The vines are cultivated according to biodynamic principles using animal manure, silica and herbal treatments. With a limited yield of 22hl / ha, the harvest is carried out manually and immediately transported to the winery in small boxes.

In the winery, the Domaine Pignier Savagnin Sus Voile grapes are first gently pressed and then fermented in 228-litre burgundy barrels with native yeasts. After fermentation, a thin layer of yeast forms on the surface (yeast cap), protecting the wine from oxidation as it ages for 36 months. No winemaking products are added and a light filtration is carried out before bottling on a “root” day of the lunar calendar.
