About Domaine Tollot-Beaut Chorey-Les-Beaune

Did you know that compound names inherently carry a unique way of narrating family stories? Domaine Tollot-Beaut, an iconic winery in the Côte d’Or in Burgundy, France, is a prime example of how familial history shapes a present rich in tradition.

Founded in 1921, this winery was among the first in the region to bottle their own wines on the estate. It is situated in the heart of Chorey-Lès-Beaune, on Rue Alexandre Tollot, so named in honour of the great-grandfather, who was not only a key figure in the family but also the village mayor. Its name, "Tollot-Beaut," pays homage to the union of the surnames of Alexandre Tollot and his wife Aurélie Beaut, reflecting a marriage both of love and commitment to wine and community.

Today, the fifth generation remains at the helm of the domaine. Nathalie is the visible face, but she is not alone: alongside her cousins Olivier and Jean-Paul, she works with passion to preserve and expand the legacy. What began with vineyards in Chorey-Lès-Beaune has expanded with acquisitions in prestigious appellations such as Savigny, Aloxe, Beaune, Corton Bressandes, Savigny Champs-Chevrey, and Chorey-Lès-Beaune Pièce du Chapitre.

But if there's something that stands out about Tollot-Beaut, it is their dedication to old vines of pinot noir, as demonstrated in Domaine Tollot-Beaut Chorey-Les-Beaune. A wine with profound and authentic character, it is the result of a meticulous process, both in the vineyard and the winery. For its vinification, all grapes are destemmed before fermenting in stainless steel tanks for 10 to 12 days, with a pigeage (punching down of the cap) twice daily to extract all its character. Subsequently, the wine matures for 16 to 18 months in barrels, with up to 20% new oak, achieving a perfect balance between structure and elegance.
