About Dominio de Tares Cepas Viejas

Dominio de Tares Cepas Viejas is a red wine made by Vineyards and Winery of Dominio de Tares, one of the wineries to note in the Bierzo region located in San Román de Bembibre.

The climate in this region is continental yet mild due to moisture from the Atlantic. Temperatures range from between 3.6° C in winter and 23,6º C in the summer. This wine comes from a single variety of the Mencia grape, from vines more than 60 years old, planted on south-facing slopes where the soil contains calcareous clay, slate and gravel. The vineyards are located at an altitude of 600 meters above sea level. As for the ripening process, after the stemming and crushing of the grapes is carried out, alcoholic fermentation occurs in stainless steel tanks for 15 days at a controlled temperature of 30° C. Subsequently, the must undergoes malolactic fermentation in American oak barrels. Maturing takes 9 months in American oak barrels (Missouri and Virginia) and French oak barrels (Allier & Nevers), the barrels are both new and pre-owned.
