The immune system of an individual is tasked with safeguarding the body against diseases and infections. Certain pharmaceuticals, such as antibiotics, are employed to combat bacterial infections and can assist in eradicating harmful bacteria. Nevertheless, it is crucial to acknowledge that the overuse or misuse of medication can have adverse consequences as it hinders the body's ability to develop its own natural defenses. Similarly, biodynamic agriculture advocates for and fosters the health and balance of the vineyard. This agricultural approach is grounded in holistic principles and aims to cultivate sustainable farming systems that are in harmony with nature. A staunch proponent of biodynamic farming in the vineyard is Mathilde Chapoutier, the 8th generation of the esteemed Rhône wine-producing family, who believes that the vineyard is part of a broader ecosystem, focusing on enhancing the health of the plant and its interaction with the soil, water, air, and surrounding biodiversity. It was during one of her trips in 2005 that she fell in love with Dominio del Soto, a family estate managed organically, located in Sotillo de la Ribera (Burgos), and she rolled up her sleeves to impart biodynamic philosophy in the lands of Ribera del Duero.
Her wine, Dominio del Soto Crianza, originates from this 16-hectare estate. It is a monovarietal of tempranillo with vines situated on terraces at an altitude of between 850 and 900 meters above sea level on clay-limestone soil. The vineyard is managed organically with biodynamic treatments to foster vines that are more resistant to diseases and environmental challenges, and the harvest is conducted manually using 20kg boxes. Subsequently, in the winery, vinification occurs in concrete tanks with cold maceration prior to fermentation, lasting 4 to 6 weeks. Finally, the wine is aged in French oak barrels and concrete tanks for 12 months.
