If there is something special about building your own estate from small plots acquired between the Roche de Vergisson and the Roche de Solutré, in the heart of Burgundy (France), it is that you have the freedom to carefully choose each plot, ensuring that each selected vineyard represents the best of the region's terroir. This meticulous selection allows for thorough control over each of the vines, guaranteeing a bespoke cultivation and the artisanal care that characterises exceptional wines. This is how Eve and Michel Rey, from their humble beginnings in 1988, began to build their own winery with dedication and patience. Each acquired plot not only represents a new opportunity but also a commitment to quality, sustainability, and respect for nature. The artisanal approach they have adopted allows them to manually work each vineyard, applying organic techniques, without insecticides or pesticides, leading to grapes that express the purity of the soil and the region's microclimate. Michel focuses primarily on the vineyards, while Eve crafts the wines with precision and passion in the winery.

In Carmentrant, a vineyard planted on three types of soil: shallow hard limestone soil of "A Gryphées," medium soil, and limestone soil, is where Eve & Michel Rey Pouilly-Fuissé En Carmentrant originates. This is a white wine made from old Chardonnay vines that are cultivated organically, without the use of pesticides or herbicides, respecting both the environment and the quality of the grape. The harvest is done by hand, with a rigorous selection of the grapes in the vineyard to ensure that only the best fruit reaches the winery. Once there, the grapes are gently pressed and the must ferments naturally, with indigenous yeasts, at a controlled temperature to preserve the aromas and freshness. Subsequently, the wine matures for 10 months in oak barrels, which gives it an elegant character and a silky texture, without losing its characteristic freshness.
