Thanks to people like Fabio Coullet, a winegrower committed to the landscape of the Axarquia region of Málaga, in Andalusia (southern Spain), local varieties as rare and special as the Romé show us the most authentic character of this place. All this effort has paid off thanks to his commitment to organic agriculture in the vineyard and minimal intervention in the winery. A real find that will allow you to enjoy a true wine treasure of Málaga’s Axarquia region.

If there is one thing that makes Axarquia stand out, it is its impressive rugged landscape at the foot of the Sierra Tejeda. A journey through numerous ravines and peaks of up to 1,500 metres above sea level, whose decomposing slate soils and steep slopes make it necessary to practice what is known as heroic viticulture. Fabio Coullet Romé-Conte is a single-variety wine made with the almost extinct Romé variety that Fabio selflessly recovers in a single plot using organic and sustainable practices. The grapes are harvested by hand in 11 kg boxes and then, in the winery, the grapes are destemmed and placed in stainless steel tanks to macerate with their skins for 9 days at a controlled temperature. The wine is then pressed and transferred to French oak barrels for malolactic fermentation and aging for 13 months.

Fabio Coullet Romé-Conte 2021 is a concentrated red wine that offers delicate notes of strawberry and a mineral nuance that recalls the slate of the soil. Freshness, fullness and tannins softened by the oak give life to this balanced vintage, with freshness, good acidity and an enveloping palate.
