About Fabio Coullet Villazo

The work of winemakers, year after year, is dictated by the vagaries of climate, the land, and the natural challenges they encounter in vine cultivation. When we add the inherent geological difficulties, we face what is known as heroic viticulture. From steep slopes to rocky terrains, winemakers are compelled to tackle extremely arduous conditions to cultivate grapes and produce exceptional wines. In La Axarquía, a unique location with these characteristics situated to the east of Málaga (Spain) and surrounded by mountains with steep inclines, Fabio Coullet establishes his personal project: a winery dedicated to extracting the best from such a rugged region with minimal intervention and maximum authenticity.

From land with slopes reaching up to 70%, Fabio Coullet Villazo emerges, a wine originating from a single vineyard named Pago Villazo, encompassing a total of 6 hectares, situated at an altitude of 500 metres, with old vines planted on schist slate soils. Specifically, the variety cultivated here is Moscatel de Alejandría, 50 years old, organically grown without the use of chemicals. The harvest is carried out manually and in the winery, the grapes are destemmed and gently pressed. The must obtained from Fabio Coullet Villazo ferments in stainless steel tanks with native yeasts for 15 days in contact with its lees and without batonnages. Afterwards, Fabio Coullet Villazo rests for 11 months in new 225-litre French oak barrels and is finally bottled without fining or cold treatment.
