About Fino Maestro Sierra
Fino Maestro Sierra is a delicate Fino wine from Jerez made with the Palomino variety by the El Maestro Sierra winery in the D.O. Jerez-Xérès-Sherry.
Maestro Sierra is a small winery with almost two centuries of history. It all started in 1830 when José Antonio Sierra became a producer and made his dream come true. He went from manufacturing barrels for the most prestigious wineries in Jerez to bottling his own wines. Today his family continues the legacy, maintaining the same quality and prestige that the founder established.
Fino Maestro Sierra is made with the local native variety from Marco de Jerez; the Palomino. This variety is very resistant to drought and is able to survive harsh conditions. The vines grow in the typical albariza soil, a type of land with whitish pebbles that is characterised by its ability to store water in the subsoil from the short but intense rains.
The Fino Maestro Sierra vinification process begins with the production of a base wine. It is then topped up to 15% alcohol to encourage the yeast cap to develop. This is a natural layer of yeast that completely covers the surface of the wine, preventing possible oxidation and giving the wine some unique organoleptic characteristics. The wine undergoes a biological aging process in 500-litre American oak casks and, following the traditional Marco de Jerez system of criaderas and soleras, it ages for a minimum of three years.
