About Foresta Ancestral Blanc de Blancs

It seems that pét-nat wines (natural sparklings) are on everyone's lips, and rightly so. Their freshness, authenticity, and delicate effervescence have made them the favourites of those seeking something out of the ordinary. But what truly makes a pét-nat shine even more is when it comes from a micro-winery like Foresta, the project initiated in 2011 by Lluís Carsí and Gerard Maristany in the heart of the Massís del Garraf (Catalonia), which has championed minimal intervention and respect for nature.

Their pét-nat Foresta Ancestral Blanc de Blancs is a sparkling wine made from Macabeo, originating from a small 0.41-hectare plot planted in 1984 on clay-limestone soils with a gentle south-facing slope. Its production is pure craftsmanship: the wine is bottled before fermentation is complete, capturing its natural carbon dioxide in the most genuine way possible. No additives, no tricks, just grapes and time. The process includes 9 months of bottle aging on its lees, and the disgorgement is done by hand, at room temperature, adhering to the ancestral tradition that brings this vibrant and characterful pét-nat to life.

Foresta Ancestral de Macabeu 2021 boasts an appealing pale yellow hue and a crisp effervescence. On the nose, it reveals a fresh profile with hints of white flowers and fruits such as pear and apple, displaying a delicate complexity. On the palate, it feels balanced and lively, with a saline touch that enhances its freshness. This sparkling wine is fruity and light, notable for its good acidity and a pleasantly flavourful finish.
