Freixenet Malvasia is a cava crafted by Freixenet in Sant Sadurní d’Anoia, DO Cava.
Freixenet is among the most renowned cava brands. Its history dates back to 1861 when the Sala family began producing still wines. However, it wasn't until 1911 that the heiress of Casa Sala married the youngest member of the Ferrer de la Freixeda family, and they commenced the production of sparkling wines using the traditional method akin to Champagne. In 1914, the first bottle of sparkling wine was released under the Freixenet brand.
Today, Freixenet is a viticultural group with over 20 brands spread across Spain, France, the United States, Mexico, Argentina, Chile, and Australia. With a production exceeding 114 million bottles annually and exporting to more than 150 countries.
Freixenet Malvasia is a cava made from Malvasía grapes sourced from vineyards in the La Bisbal del Penedès area, located at the foothills on poor, stony soils.
The harvest is conducted manually in 25kg boxes. Once in the winery, the grapes are processed in pneumatic presses to obtain the free-run juice without pressure. This must is left to settle for 24 hours, then once clarified, it is transferred to stainless steel tanks at a controlled temperature of 14-16°C, where the initial fermentation takes place over 10-12 days. After fermentation, it rests for several months in stainless steel tanks. Following a series of rackings, it is bottled for the secondary fermentation. After disgorging, 52 grams of sugar per litre of cava are added. The ageing varies each year depending on the quality of the harvest, but it is never less than 15 months.
Freixenet Malvasia is a fruity, structured, and sweet cava. The aromas of very ripe white fruit of the variety are enhanced by the sugar in the dosage, making this cava the perfect companion for desserts.
