About Gabin et Félix Richoux Irancy Les Cailles

William Kelly, a taster for Parker at The Wine Advocate, has described their wines as "a revelation." And it's no small feat. Since 1620, the Richoux family has been crafting wines in the A.O.C. Irancy, and to this day they continue to astonish with creations like Gabin et Félix Richoux Irancy Les Cailles.

After several centuries, the current torchbearers of this esteemed family enterprise are Thierry Richoux and his two sons, Gabin and Félix, who are actively involved and learning the ropes to eventually take over one of the most revered and admired wineries in Burgundy. Becoming a master of pinot noir requires time, an endeavor to understand the intricacies of this varietal, its optimal ripeness, and the methods to extract its finest qualities. All the grapes used by the Richoux family are sourced from the unique amphitheater of vineyards encircling the village of Irancy, which gives birth to a very different style of pinot noir than typically expected. While one might anticipate a light and spicy wine from this northern French appellation, the A.O.C. Irancy is capable of delivering robust and characterful wines, much more luscious. This is partly due to the orientation and arrangement of the vineyards, which create particularly favorable climatic conditions (unique in the world), yielding singular pinot noir grapes. In all these vineyards, the Richoux family cultivates biodynamically, with controlled yields, manual labor, and extended aging periods (up to two years).

Gabin et Félix Richoux Irancy Les Cailles is hand-harvested and promptly transported to the winery, where it is fully destemmed and vatted. The next step is for the indigenous yeasts of Gabin et Félix Richoux Irancy Les Cailles to initiate fermentation spontaneously; but before this, the grape must will undergo a cold maceration for about three days to extract a wealth of aromas and flavors. After these processes (by which time we're almost encroaching on spring), Gabin et Félix Richoux Irancy Les Cailles will undergo malolactic fermentation and will be aged for two years: one in stainless steel vats and another in French oak barrels.
