About Hatzidakis Santorini Familia

Hatzidakis Santorini Familia is a white wine on lees of the Assyrtiko variety produced by Hatzidakis in PDO Santorini (Greece).
 
Hatzidakis came into existence in 1996 when the late Haridimos Hatzidakis decided to recover the abandoned vineyards of his wife's family in the town of Pyrgos (Santorini) using respectful agriculture and respecting the Santorini tradition. Currently, his daughter Stella Hatzidakis takes charge of the great legacy her father left her. 
 
We find an example of this work in Hatzidakis Santorini Familia. A wine whose grapes come from the family’s vineyards across the island. Vineyards located at altitudes ranging from 200 to 300 meters, in volcanic igneous lava soils. They use environmentally-friendly agriculture and harvest is carried out manually when the grapes reach optimum ripening. 
 
In cellars, the grapes of Hatzidakis Santorini Familia spend the first night in cold storage. Then they’re gently pressed and the resulting must ferments with native yeasts at a controlled temperature (17-18ºC). Finally, the wine matures for 6 months in stainless steel tanks before bottling.
 
Hatzidakis Santorini Familia is the first wine made by the new Hatzidakis generation. A fabulous white wine which brilliantly shows the special features of a unique volcanic terroir.
 
2018 Hatzidakis Santorini Familia 2018 is an aromatic white wine with fragrances of citrus, white flower notes and mineral hints. On the palate it’s smooth, light and fresh. An elegant wine with a brilliant acidity, a very unusual salinity and a long and persistent finish.
