About Heinrich Oh when the Saints Pet Nat

As the phrase “innovate or die” goes, when Gernot Heinrich took over the family winery in 1985, he went for it, realising the great potential of the local varieties Blaufränkisch, Zweigelt and St Laurent. A revolution in the Burgenland wine scene in Austria, which made him the first winemaker to produce high quality reds in the area. Today, with vineyards in Leithaberg, southwest of Vienna, and also across Lake Neusiedl, Heinrich continues to innovate and is considered one of Austria’s leading new generation producers. Although in the 1990s he became famous for his powerful red blends, in recent years the focus has shifted to biodynamics and producing natural wines with minimal intervention in the winery. So the style of his wines has evolved and has replaced power and extraction with more lively wines, with less alcohol and greater freshness.

But Heinrich doesn’t just make red wines. The truth is that his collection of wines is very extensive. For example, this Heinrich Oh when the Saints Pet Nat is a sparkling wine made in the ancient style from Saint Laurent vines planted on an east-facing slope of Leithaberg dominated by mica schist and a warmer microclimate. These vines, following biodynamic principles, live alongside sheep, chickens, ducks and beehives and are cultivated in a completely organic and holistic way. In the winery, the grapes are pressed in whole bunches, and then the must is cooled for rapid sedimentation before fermentation begins with native yeasts in stainless steel tanks. The must is then bottled unfermented and undergoes a second fermentation in the bottle, in the purest petillant style.

Heinrich Oh when the Saints Pet Nat is named after, and carries the image of the prominent Swedish free jazz tenor saxophonist and improvisational musician Mats Gustafsson. Like the music written by the master of improvisation, this wine is absolutely no accident. On the contrary, it is a juicy and bubbly blanc de noir bottled with an artisan approach and a lot of care throughout the process.
