Il Caggio Ipsus 2021 virtually dances on the palate with its vibrant freshness, reminiscent of the understated elegance of the 2018 vintage, yet with a more defined character. On the nose, it greets us with a seductive blend of dark cherries and fresh herbal notes. Upon tasting, it surprises with remarkable balance, unfolding flavours of black cherries and succulent blackberries, all framed by a spicy touch and a pleasant minerality. The notes of balsamic herbs, dark chocolate, and a slight earthy sensation of iron oxide add depth, while a subtle hint of blood orange rounds off the finish. Recommended for its ability to convey complexity and balance, all within a body that, although not massive, promises intriguing developments.

About Il Caggio Ipsus
Discussing the "old school" is not about looking back with rigidity, but about acknowledging a legacy that remains relevant when the valuable elements are preserved: rigour, coherence, and an unwavering respect for origin. It is a method where modernity does not replace tradition, but rather refines it.
Il Caggio, both a municipality and a winery sharing the same name, epitomises this continuity. A medieval village surrounded by rolling hills covered with sangiovese, where time seems to have stood still, yet the work in the vineyard and winery progresses with contemporary precision. Here, each clone and each plot are vinified separately, not out of technical obsession, but out of fidelity to a terroir that deserves to be interpreted with precision.
Il Caggio Ipsus represents the pinnacle of this approach. A single-vineyard sangiovese with which the Mazzei family pursues excellence in Chianti Classico. Seven clones—four developed after decades of their own research—form this Gran Selezione born up to 350 metres in altitude, where freshness and depth find their balance.
The winemaking maintains a classic rhythm: 3 weeks of fermentation with skins and an ageing process of around 18 months that combines new tonneaux, stainless steel, and cement tanks. The wine expresses itself with elegance from the outset.
With a minimal production and few vintages on the market, Ipsus has already established itself as one of the great contemporary names. And it does so by preserving the best of the old school to project it into the future.
