Il moralizzatore Bibby 2021 is a moderately aromatic white wine with a creamy profile. On the nose, it reveals notes of green apple and pear, accompanied by a hint of citrus that adds freshness. On the palate, its texture is smooth and enveloping, with balanced acidity that enhances its fruity flavours. The aging in fibreglass imparts a unique purity and elegance, making each sip a delight.

About Il moralizzatore Bibby

Have you ever heard of vespaiola? Indigenous to the north of Italy, specifically the Veneto region, it is one of the most unique varieties you can taste. Traditionally, its sweeter version (often dried to produce sweet wines) has captivated many; however, its new interpretations, such as the one produced at Il Moralizzatore Bibby, are simply irresistible.
 
Fermented with indigenous yeasts and aged in steel and fiberglass, Il Moralizzatore Brespa heralds the beginning of a new era. Industrial and impersonal productions, reliant on machinery and high-yield harvests, have given way to a much more responsible and committed viticulture, not only towards the environment but also towards the vintners themselves. This movement has been spearheaded in part by Andrea Dalla Grana and Enrico Frisone, the two founders of Il Moralizzatore, a winery that is part of this change. Directly influenced by Angiolino Maule, a leading figure in biodynamics, this pair dedicates their knowledge of animals and chemical compounds to the noble cause of natural wine, always striving to find the purest expression of the terroir. To achieve this, they employ biodynamics, cultivating their five hectares with green manures, perennial pastures, various homemade preparations, and no chemical products. Indigenous yeasts will initiate the alcoholic fermentation after maceration with the skins. Il Moralizzatore Bibby will spend approximately six days in contact with the skins and will finish with about a year of aging in steel and fiberglass tanks.
