About Il Moralizzatore Brespa

Andrea is a veterinarian. Enrico is a pharmacist; and they not only share a friendship but also a passion: natural wine. In 2010, after years of tastings and winery visits, they took the plunge and founded Il Moralizzatore, one of the most intriguing projects in northern Italy where Il Moralizzatore Brespa is produced.
 
From the outset, more than a job or a profession, Il Moralizzatore became an obsession: everything is done manually, no chemical products are used (only biodynamic preparations), and copper and sulphur are minimized... Only in this way can the purest expression of the vespaiolo, the native white variety of the region from which Il Moralizzatore Brespa is made, be achieved. Ultimately, this is the goal that both Enrico and Andrea strive for daily. They also achieve this through minimal intervention in the winery, where every effort is made to avoid any corrections during production.
 
The vespaiolo of Enrico and Andrea originates from the one and a half hectares they cultivate in Fara Vicentino, a village in the province of Vicenza, in the Veneto region. Here, in this area of northern Italy, the soil composition is highly varied, although its volcanic character is undeniable. Under the I.G.P. Veneto designation, and outside any denomination, Il Moralizzatore Brespa is produced. This is the price to pay for remaining true to their principles, based on low yields and unconventional production methods. In the case of Il Moralizzatore Brespa, the grape clusters are manually destemmed, achieving a distinctive touch that is the hallmark of the house. Finally, after fermentation, Il Moralizzatore Brespa is left to rest in the cold. During this time, as the must remains at low temperatures, the suspended substances will settle at the bottom of the tank, resulting in a clean and clear wine.
