Javier Sanz Verdejo originates from the most personal selection made by this winemaker from Villa Narcisa, a family estate located in La Seca, featuring old vines over 40 years old on clay soils with pebbles on the surface. All tasks are performed manually, with utmost respect for the environment and always aiming for the highest quality. The climate is continental, with very cold winters and scorching summers, where the days are also marked by a significant temperature fluctuation between day and night, allowing the grape to maintain its acidity and achieve perfect balance. This ripening point, crucial for the subsequent production, is preserved through an early harvest where the clusters are gathered manually and mechanically during the night, taking advantage of the low temperatures. Only in this way can the clusters arrive at the winery in the best possible condition. 
 
Javier Sanz Verdejo is processed and pressed, swiftly moving to cryomaceration tanks where the must is clarified by gravity for a full day. Once clean, free from suspended substances that might interfere with the final aromas and flavours, Javier Sanz Verdejo ferments in stainless steel tanks and will remain in contact with its lees for several months before bottling.

Javier Sanz Verdejo 2021 is a bright white with greenish touches. The nose is fresh and aromatic with hints of sweet grapefruit, green apple, anise and fennel. The palate is dry and medium-bodied with refreshing acidity. Very easy to drink.
