About Jean-Paul Droin Chablis 1er Cru Montmains 2018

The Celts were the first to realise how fertile this area was. Vines would grow with extreme ease. They did not need much more persuading to settle in this area which they named by joining together two words: cab (which means hut) and leya (near the forest).

Different studies and research date this to 700 BC. Since then, different groups of people have contributed to the winemaking tradition that has existed throughout history in the Chablis valley: the Gauls, Romans, different monastic orders and the Droin family (who have been making wine on their domaine since the 17th century).

If this northern part of Burgundy, where devastating spring frosts are common, is known for one thing, it is kimmeridge, a cold soil composed of limestone clay. This surface, which was submerged during the Jurassic period, is formed by oyster fossils and is where Chardonnay finds its home, ripening perfectly. From this exceptional terroir, recognised the world over, great Chablis wines are born, like Jean-Paul Droin Chablis 1er Cru Montmains.

This wine, made by Jean-Paul Benoit Droin (13th generation of the family), comes directly from the 2.15 hectares of 45 year old vineyards from the Premier Cru Montmains (which are cultivated using sustainable viticulture).

In the winery, Jean-Paul Droin Chablis 1er Cru Montmains is pressed and settled (between 12 and 24 hours) with enzymes at about 15°C. Once clean and clear, the Jean-Paul Droin Chablis 1er Cru Montmains must is racked into stainless steel tanks and barrels, where it will undergo alcoholic and malolactic fermentation with native yeasts. After 8-10 months of aging, Jean-Paul Droin Chablis 1er Cru Montmains is blended, lightly filtered (only if necessary) and finally bottled.
