About La Fita Ancestral

There are viticulturists, and then there are pagesos—farmers, in Catalan. The difference is subtle, yet profound. A pagès not only works the land: he lives on it, breathes with it, and allows himself to be shaped by its rhythm. This is how Martí Torrallardona defines himself; more of a man of the field than a winemaker, more of an observer than an intervener. His motto encapsulates this perfectly: "minimal intervention, maximum knowledge." Or put another way: do just enough... but know everything.

From this philosophy emerges La Fita Ancestral, a sparkling wine that looks back to move forward. It originates from the Can Patomàs plot, nestled in the heart of Penedès, a vineyard half a century old on clay-limestone soils where macabeo has been whispering the language of the landscape for decades.

The harvest, as always at La Fita, is manual and meticulous. The grapes are pressed directly to capture their most crystalline purity. Fermentation is spontaneous, with indigenous yeasts, and concludes in the same bottle, following the ancestral method. The wine then rests for 6 months on its fine lees, refining texture and bubbles without losing energy or vivacity. With less than 2 g/L of residual sugar, it is a dry, clean, straightforward sparkling wine without artifices.

In times of designed wines, La Fita Ancestral champions the truth of the countryside. Neither more nor less. And therein lies its magic: a lively and vibrant wine that reminds us that simplicity is not simplistic, but essential.
