About La Taille Aux Loups Remus

La Taille Aux Loups Remus is an organic monovarietal Chenin Blanc white wine from the AOC Montlouis in the Loire, France, produced by Domaine de la Taille aux Loups.

Domaine de la Taille aux Loups is a winery owned by the well-known former négociant en vin, Jacky Blot, who has not only played a decisive role in bringing Montlouis out from under the shadow of Vouvray, but has also managed to establish a reputation of his own with his excellent sparkling white wines that he produces with finesse, elegance and storing capacity.

An example of the above is La Taille Aux Loups Remus, a wine that is conceived by applying the principles of organic winemaking, without the use of pesticides or other oenological compounds in the vineyards. In addition, in vinification, only wild yeasts are involved. The plots from which the Chenin Blanc grapes come are composed of clay, siliceous and limestone soils from pure parent rock, and the harvest is carried out manually.

To produce his white wines, Jacky Blot takes his lead from the outstanding winemakers of Burgundy. He exposes the grape must to oxygen before it undergoes a fermentation that can last up to 9 months. This is due to the climatic conditions in the cellar, which is excavated in underground tunnels of tuffeau or chalk. Lastly, the wines are rounded off in steel tanks before bottling, which enhances their texture.

The result is overwhelming. La Taille Aux Loups Remus is a complex and seductive white wine with a deep, lingering and mineral mouthfeel, that is highly expressive and full of energy. It is the perfect expression of the Chenin Blanc from the Loire.

La Taille Aux Loups Remus 2020 is a creamy white wine with aromas of white fruit, herbal notes, and mineral reminiscences. On the palate, it is dry, vibrant, and seductive. A delicate wine with pleasant acidity, a granular texture, and an elegant and aromatic finish.
2018 La Taille Aux Loups Remus 2018 is a dry white wine with a pleasant minerality, and with a core of fresh and delicious acidity. Its aromatic profile is very floral, with citrus sparkles and those of fine herbs, and memories of ripe apples and pears. Concentrated and complex. Very expressive and direct.
