About Fuentes Del Silencio Las Jaras
Las Jaras is a red wine made with the Mencía, Alicante Bouschet and Garnacha varieties by the new Fuentes del Silencio winery in the VT Castilla-León.
Fuentes del Silencio lies on the banks of the Jamuz River, in the Leon village of Herreros del Jamuz. It’s a new winery run by winemaker Marta Ramas and guided by Raúl Pérez where they use integrated viticulture, bringing back ancient methods and promoting the region’s native varieties.
Las Jaras comes from old vines planted in clay soils with a high iron content. A privileged area south of the Jamuz Valley (Castilla-León) that benefits from a microclimate, sheltered by Monte Teleno. They use conventional agriculture with ancient techniques and the harvest is carried out manually in 15 kg boxes.
When the grapes reach the winery, they are placed, box by box, into French oak wooden foudres, with most of the stalks. Las Jaras ferments there with native yeasts and is left to macerate for about 35 days. It is then gently pressed and put back into the foudres to age for 9 months.
Las Jaras is a fresh and direct red wine created through a coupage of three unusual varieties that grow surrounded by wild roses (jaras); hence the name.
