El Muelle de Olaso is a white wine crafted by Bodegas Luis Pérez in Jerez de la Frontera, under the designation of VT Cádiz.
After an extensive career in the oenological world, particularly in the field of research, Luis Pérez embarked on this venture in 2002 with the aim of reviving the tradition of Jerez wines. Thus, El Muelle de Olaso would re-emerge under the group known as Vinos de Pago. Specifically, this term refers to the natural wines of the Jerez region, which are not fortified and naturally achieve their alcohol levels (without the addition of wine spirit). These wines were particularly prevalent in ancient times; however, changes in consumer preferences and the drafting of the first regulations of the DO Jerez-Xérès-Sherry—which mandated fortification—led to their decline in prominence by the early 20th century. Since 2017, circumstances have shifted, and Luis Pérez has been producing from the 25-hectare Hacienda Vistahermosa estate. This distinctive estate is situated in the very heart of the Jerez vineyard on the elevated hill of Pago del Corchuelo, with unique characteristics:
- Its high altitude influenced by maritime winds and a specific microclimate.
- The soil composition, with calcareous clays and unique gypsum marl in the area. The Albariza.
- The vineyard planting and management are geared towards producing wines of exceptional quality.
Bodegas Luis Pérez is equipped with state-of-the-art facilities, designed for minimal intervention throughout all processes, thereby achieving wines that fully express the variety and the terroir from which they originate.
El Muelle de Olaso is crafted from palomino from Pago Carrascal, one of the finest vineyards in the area located in the municipality of Sanlúcar de Barrameda, very near the Atlantic Ocean, where Albariza soils abound. The harvest of El Muelle de Olaso is conducted manually, meticulously selecting the grape clusters at their optimal ripeness. This task, extending over two months, is critically important as it determines the future quality of this wine. Once in the winery, 80% of El Muelle de Olaso ferments in stainless steel tanks, while the remaining 20% is left to sun-dry before fermenting later in sherry casks and resting on its lees for 6 months in the tank.
