About Nicolas Carmarans Selves

Nicolas Carmarans Selves is a natural and ecological barrel-aged white wine made with the Chenin Blanc variety in the Occitania area (France) by Nicolas Carmarans.

After selling his charming Paris wine bar, Café de la Nouvelle Mairie, Nicolas Carmarans moved to Aveyron, in southwest France, to pursue his great passion. There, he produces delicious natural wines using native varieties under the local IGP Aveyron. This is an area full of steep terraces that are difficult to access.

Nicolas Carmarans Selves is made from vines aged between 5 and 50 years old and planted in granite soils on the banks of the Selves River. The team use organic agriculture and no chemical products to respect the natural balance of the soils and vines. The harvest is carried out manually at the optimum point of ripeness.

In the winery, the Nicolas Carmarans Selves grapes are directly pressed and the resulting must rests overnight. It is spontaneously vinified with native yeasts and aged on lees in barrels. Before bottling, it is not filtered or clarified and only a minimum amount of sulphur is added.

Nicolas Carmarans Selves is a 100% Chenin white wine that reflects Aveyron’s natural beauty. Purity, elegance and depth.

2016 Nicolas Carmarans Selves 2016 is a profiled wine with aromas of white flowers, ripe tropical fruit and notes of sea shells. On the palate it is meaty, mineral and enveloping. The fruit is well integrated with a brilliant acidity and a delicious tension.
