About Nun Vinya dels Taus
Nun Vinya dels Taus is a wonderful white wine made by the Enric Soler winery in the small town of Torrelavit, in the Penedès wine region.
Enric Soler was chosen as Spain’s best sommelier in 1997. In 2004, he started his project, on a low budget, by recovering a small plot of old Xarel·lo vines and restoring the basement of a farmhouse turning it into a micro-winery. This is when he made his first wine: Nun Vinya dels Taus.
Nun Vinya dels Taus is a single-variety Xarel·lo wine that starts life in a small vineyard of no more than 0.89 hectares and aged around 70 years old. It is cultivated with great care in the Alt Penedès areas, in line with the principles of biodynamic agriculture.
It is called Taus in honor of the group of moles who live on the plot. The plot was replanted around 1940 (the vines that were there previously were uprooted during the Civil War to create a republican airfield). It is a unique vineyard with a great diversity of old clones. Enric Soler cares for this plot like it were a vineyard-garden.
The harvest is carried out manually. The grapes are destemmed and cold macerated for 10-12 hours in a carbonic atmosphere. After static racking, the barrels are filled by gravity. 50% of the barrels are new French oak and 50% are second-use. This is also where the must spontaneously ferments and ages for 9 months. This decadent and complex wine is made with great care but very little intervention.

One of the most elegant, serious and complete white wines from Penedès. A round wine. Attractive yellow colour with delicate golden reflections. Clean and bright wine with dense tears. Very elegant, very fresh and seductive aromas with abundant notes of intense ripe white fruit, fresh citrus and aromatic flowers. All of these aromas are mixed with the creaminess provided by the oak. |
