About Oddero Cascina Fiori Moscato d'Asti
Oddero Cascina Fiori Moscato d'Asti is a sparkling monovarietal Moscato Bianco white wine from the DOCG Moscato d'Asti, produced by Poderi e Cantine Oddero.
Poderi e Cantine Oddero is a family winery that is a historic name among producers of Barolo. It was founded in Langhe, in Piedmont, in 1878 and is currently still in the hands of the same family. It has 35 hectares of vineyards and works based on traditional know-how and using new production techniques to produce high quality grapes and wines.
The vineyard for Oddero Cascina Fiori Moscato d'Asti is located in Trezzo Tinella Cascina Fiori, 400 metres above sea level, and faces southeast. The vines are between 15 and 20 years old, are trained in Guyot style and produce around 7,000 kg per hectare.
To produce Oddero Cascina Fiori Moscato d'Asti the harvest is performed manually. Once in the winery, it is then destemmed, squeezed and vatted so that the must macerates cold with the skins for about 12 hours to extract aromatic compounds. It is then pressed and the must is cleaned by cold decanting for another 48 hours. The must then ferments in stainless steel tanks, and at mid-fermentation it is cold-halted to preserve part of its sugars. It is bottled at two moments, one in November and another at the end of February, and sometimes a third time in April. A total of 15,000 bottles are produced.
