About Ònix Evolució

Ònix Evolució is a red wine from the Priorat region produced by Vinícola del Priorat. The wine is a blend of 3 different grape varieties: samsó and garnacha tinta.

The grapes used to make Ònix Evolució are selected from more than 300 plots of vineyards that the winery owns, grown on slate soils.

The winery is carried out manually, with the grapes being transported to the winery in small boxes of a 15kg capacity. This way the grapes do not break and loose their qualities prematurely before the vinification process takes place.

At the winery, the grapes pass through a crusher-destemmer. Then they are placed in stainless steel vats of 5,000 litres, with warm and cold temperature control. The after pre-maceration in cold, alcoholic fermentation at takes place at 28˚C. Then, maceration takes a minimum of 25 days followed by malolactic fermentation. The wine then ages for 12 months in french oak barrels.

Vinícola del Priorat is a local cooperative formed by 140 farmers who oversee and manage all aspects of the winemaking process: from the cultivation of the vineyards all the way to the marketing of the wine.

2018

Ònix Evolució 2018 is an exceptionally expressive red wine. The bouquet is redolent with sweet spice aromatics such as vanilla and cinnamon. On the palate, it bursts forth with an amalgamation of ripe black and red fruits. It boasts a well-balanced acidity, culminating in a lengthy, pleasing, and dry finish. 
2011 Fruit-forward, exhibiting a favourable development and delightful acidity.

Clean and luminous cherry-red with a deep hue.

Robust and intricate, with balsamic nuances and a pronounced intensity.
