Dreaming is a pursuit only the bravest dare to undertake. Would you dare to do it with Pago de los Capellanes Un Sueño en las Alturas?
The villages of Fuentenebro, Pardilla, and Honrubia—located on the northern slope of La Serrezuela (in the Central System)—are the birthplaces of this red wine crafted by Pago de los Capellanes. The vineyards, aged between 50 and 60 years, are planted between 900 and 1200 meters above sea level, with origins dating back to the Paleozoic era, long before the other plots of the D.O. Ribera del Duero. The various materials deposited over the years (which mix throughout the valleys and slopes) form the true essence of this red wine, where the tempranillo grape can shine in all its glory thanks to these clay loam soils. The siliceous rocks, gneiss, and quartz that make up this structure bring out the freshest and most mineral version of this variety.
Likewise, not just any cluster can be part of Pago de los Capellanes Un Sueño en las Alturas. Only the finest grapes from the plots of Montejo, Pardilla, Toboganes, and Canteras will be selected for the vinification process carried out at the winery's facilities in the Burgos village of Pedrosa de Duero. After a three-day cold pre-fermentation maceration, Pago de los Capellanes Un Sueño en las Alturas will be ready to ferment with selected native yeasts. This crucial microbiological process takes place in stainless steel tanks at a controlled temperature. From here, Pago de los Capellanes Un Sueño en las Alturas is racked and transferred to French oak vats where it will undergo malolactic fermentation and rest for a year. This resting period, during which the lees are occasionally stirred, allows Pago de los Capellanes Un Sueño en las Alturas to stabilize, making clarifiers unnecessary at the time of bottling.
Not everyone dares to dream. However, Pago de Capellanes has done so magnificently with Pago de los Capellanes Un Sueño en las Alturas. And you? Do you dare to make the dream come true?
