About Pago de Otazu Chardonnay con Crianza

The best of the best. The pinnacle of quality. The ultimate wine. Not everyone can achieve Vinos de Pago classification. This denomination is similar to the Oscars in cinema, the Television Awards or the Grammys in music. Better still than the D.O. Ca (which only La Rioja has), the Denominación de Origen Protegida Vinos de Pago (D.O.P. Pago) classification only appears on labels from the best vineyards. Currently only 19 wineries in Spain enjoy this classification, which allows them to produce wines under their own denomination. Bodegas Otazu is one of them with their Pago de Otazu Chardonnay con Crianza white wine.

To obtain the D.O.P. Pago classification, there are certain requirements. The first is a unique and special location, with quality soils. And Pago de Otazu Chardonnay con Crianza qualifies. Otazu and their vineyards are a winery with D.O.P. Pago classification located in the northernmost part of Spain. They are located in Etxauri, very close to Pamplona, the Cantabrian Sea and the Pyrenees, at an altitude of 390 metres above sea level, on a wide variety of soils (alluvial and clayey) and under a climate full of contrasts: rainy in winter and spring and warm and dry in summer. So far so good.

Now for the second requirement: to grow and cultivate under a special microclimate. Fortunately, Pago de Otazu Chardonnay con Crianza is also immersed in a climate full of contrasts, with rainy winters and springs, and dry and warm summers.

Finally, making wines using the company’s own grapes is key. In this case, Chardonnay is grown on the estate’s 319 hectares. Of these hectares, 116 of them are vineyards growing Chardonnay (obviously) and other varieties like Tempranillo, Merlot, Cabernet Sauvignon, Cabernet Franc and Berués.

Obviously, production is another aspect to be taken into account. And when it comes to the D.O.P. Pago de Otazu, you have to be extremely careful, because the raw material is something special. Pago de Otazu Chardonnay con Crianza is harvested by hand, in 12 kg boxes, and quickly taken to the winery. After being received and selected, Pago de Otazu Chardonnay con Crianza is pressed and transferred directly to French oak barrels where it undergoes fermentation. Pago de Otazu Chardonnay con Crianza will rest in these same containers, in contact with its lees, for about six months.
