About Paixar

Paixer is a red wine from the D.O Bierzo produced by the Paixer winery. This is a single variety wine made with the Mencía grape, a classic variety of the region.
 

The grapes used for this wine come from old vines (which are over 80 years old), planted on slopes with a south facing orientation, at altitudes of between 700 and 1000 metres. The vineyards used span a total of six hectares and are home to slate and stony soils. The climate of the area is mainly Atlantic continental character, with generally low throughout the year average temperatures.
 

The harvest is carried out relatively late, when the grapes for Paixer have reached their optimum point of maturation, and is carried out manually using small boxes. This ensures that the grapes and bunches do not rupture and ferment prematurely. At the winery, the grapes undergo cold pre-fermative maceration, followed by fermentation using native yeasts.
 

Paixer then rests for 22 months in new French oak barrels before being bottled and placed onto the market. The result: a long and enveloping wine, with a good acidity, slightly dry and earthy.

2012 Lengthy and enveloping, with excellent acidity. Robust tannins and a very appealing dry finish.

Dark cherry red, almost black.

Cherry and cocoa notes accompanied by herbaceous hints.
