Palo Cortado Tradition VORS is a complex fortified wine that is fine and elegant on the nose, has bitter almond notes, a pastry background and balsamic notes. On the palate it is delicate to begin with, sharp and saline on the taste buds and with a bitter almond aftertaste.

About Palo Cortado Tradición VORS

Palo Cortado Tradición VORS is a fortified wine made with the Palomino variety by Bodegas Tradición in the D.O. Jerez-Xérès-Sherry.

Although Bodegas Tradición was founded in 1998 by Joaquín Rivero, the truth is that this is a continuation of a project from one of the oldest and most prestigious wineries in Jerez. CZ-J.M. Rivero was founded in 1650 and in its time, it supplied the Royal House of Spain and Portugal. Nowadays, Tradición wants to keep the family legacy going by recovering traditional processes in the production of Jerez wines and brandies.

Palo Cortado Tradición VORS comes from old Palomino vines. Strains planted in the albarizo soil that is typical of Marco de Jerez. Once in the winery, it ferments and the must, which is what, in Jerez, they call wine that is to be made into fortified wine after fermentation, starts at 15% vol and then ages biologically, under a yeast cap, using the traditional system of criaderas and soleras. Then, after the sobretabla stage, it continues to fortify and then undergoes oxidative aging in American oak casks for an average of 32 years. It is then bottled without filtration.

Palo Cortado Tradition VORS is a fortified wine with the aromas and elegance of Amontillado sherry and the complexity and body of Oloroso sherry.
