Much like his father, Paul shares a profound commitment to crafting high-quality wines, prioritising excellence, respect for the terroir, and meticulous enological practices. However, Paul adds his own touch of modernity and innovation, blending tradition with fresh perspectives to continue elevating the family legacy, which spans six generations.
With a solid background in viticulture and oenology, as well as valuable professional experiences, Paul Chavy decided in 2020 to apply all his knowledge, imprinting his own style at every stage of the winemaking process. This is reflected in Paul Chavy Aloxe-Corton, a Pinot Noir born from a profound respect for the "terroir." His approach focuses on understanding and working with the soil, which includes a meticulous analysis of it and the implementation of practices that promote biodiversity and the ecological health of the vineyard. In the winery, selected grapes are destemmed and undergo cold maceration for several days before a 22-day fermentation on skins with only gentle daily pump-overs. Afterwards, the wine ages in 228-litre oak barrels for 12 months. Finally, it is bottled without fining and with very light filtration.
The result is Paul Chavy Aloxe-Corton, an elegant and sophisticated wine that reflects not only the richness of the terroir of Aloxe-Corton but also the vision and talent of the Chavy lineage, with a fresh and contemporary approach.
