About Paul Chavy Bourgogne Pinot Noir

Hearing about Bourgogne is akin to listening to someone speak of the birthplace of wine. History, lineages, grand crus... Yet, not everything in this land is steeped in tradition. There are also new voices, new hands. And one of the most promising is named Paul Chavy.

Paul is part of a family with six generations of history at the heart of Puligny-Montrachet. At Domaine Jean-Louis Chavy, he learned from a very young age that excellence begins in the vineyard and is refined in every gesture, every selection, every ageing process.

But like any restless spirit, Paul was not content to follow the path; he decided to carve his own. In 2020, he founded his own winery, a personal project where he applies the rigour he learned, but with a fresh, modern, and creative perspective.

This is how he crafts a range of vibrant, precise, and honest wines. Like this Paul Chavy Bourgogne Pinot Noir, a Burgundian gem that exudes youth without losing class.

Made with extended maceration of up to 3 weeks, and aged for 11 months in used barrels to not overshadow the fruit, the wine completes its evolution in stainless steel for an additional 7 months to refine before bottling.
