In a family, although everyone shares the same surname, each member has their own character. Some are calm and discreet, others intense and full of energy. In Bourgogne, something very similar happens: each cru is unique and reflects the personality of its terroir. Some wines whisper delicately, while others speak loudly and clearly.
If anyone understands this family of crus like no other, it is Paul Chavy. Son of the renowned winemaker Jean-Louis Chavy, Paul was born surrounded by barrels, limestone soils, and the history of Meursault. After the division of the family winery in 2003, his father took the vineyards of Puligny-Montrachet, and now Paul carries the torch with his own style, fresh and creative, yet always faithful to tradition.
Since 2020, he has been leading his own négoce initiative, bringing to life wines that combine Burgundian precision with a modern touch: from Bourgogne Blanc to the grand Corton-Charlemagne and Saint-Aubin Premier Cru. Each wine is a sort of portrait of its origin, and Gevrey-Chambertin is no exception.
Made 100% from pinot noir, the most emblematic red variety of Bourgogne, the vineyards are cultivated using traditional methods, respecting the soil and ecosystem. In the winery, fermentation takes place in open wooden vats, with natural yeasts and gentle temperature control to extract aromas and tannins without forcing the wine. The maceration lasts just long enough to achieve colour, structure, and elegance. Then, the wine is aged in French oak barrels, approximately 20-30% new, for 14 to 18 months, which adds complexity and subtlety without masking the fruit or the character of the terroir.
The result is a Gevrey-Chambertin that reflects the full personality of the region. A wine that, like a family, shares the surname Bourgogne, but each plot, each cluster, and each barrel contributes its own personality.
