About Paul Chavy Meursault Blanc

There are individuals who assemble puzzles with patience. Others, they reinvent them… For the greatest challenge is not always to start from scratch, but to complete something already beautiful without compromising its essence.

Using as a starting point a puzzle of six generations with delicate pieces, some centuries-old, others freshly refined, all fitted together with Burgundian precision. Yet when Paul Chavy enters the scene, we encounter the missing piece. Son of Jean-Louis Chavy, raised amidst barrels and calcareous soils, Paul returned to the family estate in 2020 with a clear mission: to honour the legacy while introducing something of his own.

Thus, his personal venture was born, a winery that perfectly complements the wines of Domaine Jean-Louis Chavy. With the same rigour he learned from his father, yet with a fresh perspective, Paul meticulously selects grapes from various Burgundy crus, with a distinct preference for chardonnay.

Paul Chavy Meursault Blanc is one of his standout wines. Chardonnay vines aged between 30 and 50 years, fermentation with natural yeasts, and ageing for 11 months in 350L barrels to avoid overwhelming the profile. Finally, the wine rests in stainless steel tanks to refine the texture.

With measured elegance, subtle tension, and that creamy minerality that makes Meursault unforgettable, Paul Chavy Meursault Blanc is a wine that not only bottles a terroir but also represents a confident step towards the future of an iconic family in the grand puzzle presented by the magnificent Burgundy.
