With six generations of experience in Burgundy, he has successfully balanced reverence for the terroir and family traditions with a modern and avant-garde vision. This fusion has resulted in Paul Chavy Puligny-Montrachet 1er Cru Les Folatières, a wine that reflects his mastery and his ability to evolve.

This exceptional 1er Cru originates from 0.51 hectares of vineyards spread across two plots, each imparting different characteristics to the wine. One plot, planted in 1993, is situated on a steep, rocky terrain, endowing the wine with a unique mineral complexity. The other plot, planted in 1965, lies in a lower area with rich soils that add greater depth to the wine's profile. The combination of these soils and locations produces a balanced wine, brimming with character and complexity, faithfully reflecting the terroir of Puligny-Montrachet. After harvesting, the wine undergoes fermentation and matures for 11 months in barrels, with 25-30% being new barrels, and for an additional 7 months in stainless steel tanks.
