About Peacock Wild Ferment Sauvignon Blanc

Any good business has the guts to create a modern and groundbreaking range. So Paul Boutinot, founder of Waterkloof, one of the most important wineries in Stellenbosch (Coastal Region), has of course done exactly that. With the desire to make real, yet affordable wines, he set up False Bay Vineyards, a project overlooking the bay of the same name that is home to many of the country’s premium vineyards. A discovery that has allowed the young and talented winemaker behind both brands, Nadia Barnard, to produce honest wines from old vineyards, each of which has a personalised label made by graphic artist and renowned illustrator Stanley Chow (who specialises mainly in images of celebrities from the world of music, television, film and sports).

Peacock Wild Ferment Sauvignon Blanc is part of this range of innovative and avant-garde wines. With the name Peacock, this wine honours the majestic feathered bird that, thanks to the project’s organic and biodynamic initiatives, happily roams the vineyards. In fact, the winery is a WWF (World Wildlife Fund) Biodiversity Champion and is certified by WIETA (Wine and Agricultural Ethical Trade Association). Made with a selection of the most coastal Sauvignon Blanc sites in Stellenbosch, along with some grapes from the Waterkloof Estate, these are low-yielding vines grown without any chemicals and harvested by hand. The grapes are then pressed in whole bunches in a horizontal basket press to create only the purest must. Fermentation takes place spontaneously with native yeasts and then the wine spends a long time on the lees before bottling.

Peacock Wild Ferment Sauvignon Blanc is a fine, honest and very fresh wine. Undoubtedly, the living example of False Bay’s philosophy, an estate that is recognised for its vast expanses of native flora and fauna like caracals, foxes, leopards and, of course, peacocks.

 

2021

Peacock Wild Ferment Sauvignon Blanc 2021 is an aromatic white wine with fragrant notes of white fruit accompanied by citrus and herbaceous hints. On the palate it is fresh, fruity and flavorful. A wine with a prominent mineral core, marked acidity and a long and elegant finish.
2020

Peacock Wild Ferment Sauvignon Blanc 2020 is an aromatic white wine with a complex nose of citrus, notes of currant and hints of flint. On the palate it is fresh, fine and mineral. A wine with noticeable acidity, a pleasant texture and a nice persistence.
