About Pedro Ximénez Tradición VOS

 Pedro Ximénez Tradición VOS is a sweet wine from the D.O Jerez produced by the Tradición winery. As suggested by the name, this is a single variety wine, made using only Pedro Ximénez grapes.

This wine is the result of a selection of Pedro Ximénez grapes, which after being harvested are left out to dry in the sun. Subsequently, the grapes undergo the various phases of the winemaking process following truly artisanal methods.

During fermentation, when the very sweet must is obtained, is halted during alcoholisation to obtain a wine that will serve a base for the final product. Pedro Ximénez Tradición VOS is then aged for 20 years using the traditional solera system in seasoned American oak barrels. This sweet wine is best consumed two months after the bottle has been opened, and must always be kept in a vertical position.

Production is limited to only 6,000 bottles being produced per year, with each bottle hand labelled and numbered.

Although Tradición is officially a relatively young winery, founded back in 1998, it was conceived seeking to continue the historical relationship between the founder's family and the world of wine. A history dating back to 1650, with the CZ-J.M. Rivero winery, that internationally prestigious and responsible for providing wine to the Spanish royal family.
