Pheasant's Tears Saperavi 2023 is a Georgian gem in a bottle, remarkable for its vibrancy and authenticity. Bringing it to the nose reveals intense aromas of ripe blackberries and blackcurrants intertwined with a delicate hint of toasted almonds. On the palate, it unfolds a structure as elegant as its tannins, complemented by a refreshing acidity that enlivens the senses. The finish is spicy and leaves a slightly drying sensation.

About Pheasant´s Tears Saperavi

In Georgia, a land of majestic mountains, ancient polyphonies, and magical soils for the vine, there is a unique legend that tells of a wine so perfect, "beyond measure," that it can bring tears of joy to a pheasant. This poetic image inspired the name Pheasant’s Tears, a winery that blends millennia-old tradition with artistic sensitivity and is now a global benchmark in natural winemaking.

Georgian viticulturist Gela Patalishvili and American painter John Wurdeman, captivated by the country's culture and music, established the winery in 2007 in the eastern region of Kakheti. Their aim was clear: to create wines so beautiful they move the soul, respecting nature’s timeline and allowing each terroir to express itself with its own voice.

The latest example of this philosophy is Pheasant’s Tears Saperavi, born in the principal vineyard of Tibaani, planted by Gela two decades ago. The vines of the indigenous saperavi variety rise to an altitude of 480 metres on alluvial soils of limestone and quartz, with blue and yellow sandstone, in a cool and windy setting. The winemaking follows ancestral methods: partial destemming (50%), skin maceration for a month, and fermentation in qvevri with native yeasts. Thereafter, the wine rests for 9 months in the same buried clay vessels before being bottled with a mere 2 mg of sulphur.

The result is Pheasant’s Tears Saperavi, a profound, vibrant, and lively wine, which holds in every sip the echo of an ancient story, the whisper of Georgian soil, and the emotion of those who believe that wine, when authentic, can move even the proudest creatures.
