Perhaps it is not one of the most renowned. And it may not ring any bells at first; but just one sip of its wines and the experience will undoubtedly be unforgettable. We are talking about Ladoix, located in the north of Côte de Beaune, one of the most intriguing and flavourful regions of the Côte d’Or, where the finest producers congregate. One of them, who has recognised the virtues of this land, is Philippe Pacalet, who crafts Philippe Pacalet Ladoix Blanc.
 
You will never have tasted a blanc like this! You will never have sampled a Chardonnay like this! Specifically, the grapes for Philippe Pacalet Ladoix Blanc grow in Toppe d'Avignon, a climat situated on a gentle south-facing slope. This area is predominantly composed of clay soils over limestone rocks, known as Comblachien, which provide the perfect foundation for white wines. In the case of Philippe Pacalet Ladoix Blanc, the veteran winemaker sources grapes from local growers, provided one condition is met: that life grows naturally, without any chemicals or artifices. For Philippe Pacalet Ladoix Blanc, the clusters come from an old vineyard, over 30 years old. Quite an achievement!
 
In the winery, Pacalet remains true to the principles inherited from his uncle Marcel Lapierre: avoiding any kind of interference during the wine-making process. And he maintains this approach with Philippe Pacalet Ladoix Blanc. After the harvest, the grapes are pressed with whole clusters, obtaining the must. This juice, still unfermented, is then allowed to settle (meaning it is left to rest for a time so that all suspended substances fall to the bottom of the tank). Once clear, Philippe Pacalet Ladoix Blanc begins to ferment spontaneously with indigenous yeasts. These microorganisms are extremely important as only their presence can ensure that the terroir’s character is imprinted.
 
The crowning touch for Philippe Pacalet Ladoix Blanc is achieved during the following year, when the wine remains in direct contact with the lees, without racking. One of the finest Chardonnay you can taste!
