If we speak of Protos, we refer to the DO. Ribera del Duero. Indeed, 55 years before the regulatory council was established, a group of 11 partners in Peñafiel invested in the Castilian fields before anyone else did. United by a common dream of producing wines of exceptional quality and highlighting the virtues of Ribera del Duero, they began to craft the history of a region, bestowing it with a world-renowned reputation over several generations. This is why it bears the name Protos, meaning "the first." Despite being recognized as a red wine winery, the white Rueda from the brand has brought them much joy and has become their "pride and joy."
True to its roots while simultaneously embracing the latest technological advancements, Protos Verdejo Cuvée Eco is crafted, a white wine originating from young verdejo vineyards cultivated organically on the gravelly soils typical of the DO. Rueda region, at an altitude of 800-840 m above sea level. The harvest is conducted at night to maintain the original temperature, and the grapes are immediately transported to the winery. There, a skin maceration is performed for four hours at 10°C, followed by pressing in an inert atmosphere and static settling at 10°C. Fermentation is carried out in a controlled manner using selected yeasts. Finally, the wine ages on fine lees for about 2-3 months in stainless steel, concrete eggs, and French oak foudres.
