About Quinta Sardonia

Quinta Sardonia is an excellent red wine protected by the designation of Wines of Castilla y León produced by Bodega Quinta Sardonia, with the advice of Peter Sisseck, creator of the famous Pingus.

The climate in this area is continental Mediterranean characterized by low rainfall, very hot summers, relatively cold winters and a thermal oscillation of 18.5 ° C. This wine is a blend of Tinto Fino (57.7%), Cabernet Sauvignon (29.5%), Merlot (4%), Syrah (4.5%), Petit Verdot (2.5%), Cabernet Franc (1.3%) and Malbec (0.5%) from vineyards in the town of Villabáñez and Sardon de Duero (Valladolid) planted on soils of calcareous origin, at an altitude of between 760 and 830 metres. In Bodega Quinta Sardonia, biodynamic agricultural guidelines are followed in order to achieve a perfect balance between soil, strain, climate and environment. As for the development, selection of clusters is performed and transported to the winery, where the blend of all varieties is performed before fermentation. Fermentation is carried out with native yeast and spontaneously. Malolactic fermentation occurs in barrels before the wine is stored. Finally, Quinta Sardonia spends 19 months in French oak barrels (40% new and 60% previously used). Before bottling, it is clarified with egg white and light filtration is performed. No need to decant, but you should open this wine two hours before serving.

Intense and dark cherry colour with violet edges. Bright and clean wine with dense tear.

Its very intense and complex aromas appear slowly and are well mixed. Lots of notes of black fruits are released along with serious roasted aromas, good balsamic notes and lots of spices (vanilla, cinnamon, coconut, cocoa,...). Light floral notes and herbal hints are also noticed. When it is opened, an explosion of aromas is released and the wine gains in expressiveness and complexity.
