About Raimat El Cim del Turó

In Raimat, the landscape influences every decision. Raimat Cim del Turó is born from vineyards oriented from north to south, on loamy-clay soils, poor and shallow, where the continental climate is influenced by the Mediterranean. A demanding environment that helps preserve the grape's freshness and craft a cava of great precision.
 
To create it, Raimat combines chardonnay and pinot noir, two French-origin varieties that find a particularly balanced expression in this landscape. The harvest and winemaking process aim to preserve that freshness from the outset, essential for a sparkling wine that will later undergo a lengthy aging period. The first fermentation takes place in stainless steel tanks, at a controlled temperature of between 16 and 18 °C. Then, malolactic fermentation occurs, and the wine is bottled with the tirage liqueur to start the second fermentation, now in the bottle, at 14 °C. From there, the most patient part of the process begins.
 
Raimat El Cim del Turó remains on the lees for at least 15 months, gradually gaining complexity, creaminess, and depth. The result is a fresh and unctuous Brut Nature, with a long finish and multiple aromatic layers that gradually unfold in the glass.
