About Raúl Moreno Alba y Barro
Palomino from Sanlúcar and beba and alarije from Tierra de Barros. The finest of Andalucía and Extremadura converge in the interregional pet-nat Raúl Moreno Alba y Barro.
The origin of Raúl Moreno Alba y Barro is as captivating as the story of Raúl himself, who now, after a lifetime in London, America, and Australia, returns to his homeland, where he continues with his traditional vision of wine. To resume this path, Raúl looks back a century, just before the arrival of phylloxera, when palomino, beba, and alarije were three varieties that predominated in the Jerez region. Of all these, only palomino continued to be cultivated in the area. Today, Raúl Moreno revives this tradition, seeking the finest beba and alarije in Tierra de Barros and creating one of the most intriguing wines currently for two reasons: firstly, for the unique blend of terroirs, where the albariza soils of Sanlúcar are combined with the clay-limestone soils of Extremadura; and secondly, for its production process, with only a single fermentation, without adding dosage or any other content.
The production of Raúl Moreno Alba y Barro begins with the harvest of the palomino, which is transported to Tierra de Barros and kept chilled until the other two varieties are gathered. Once all the grapes are obtained, Raúl Moreno Alba y Barro is transferred to a pneumatic press where the must is extracted with a very low yield, 50%. After this, Raúl Moreno Alba y Barro is cooled and left to rest for several days in the cold, allowing the suspended substances to settle by precipitation, resulting in a clear wine. This process, known as racking, precedes fermentation, ensuring the wine's qualities are at their best. Raúl Moreno Alba y Barro is then transferred to open 500-litre tanks where fermentation occurs at a controlled temperature. The yeasts begin their work, and once the tanks reach the appropriate density, Raúl Moreno Alba y Barro is bottled. Thanks to this residual sugar, the yeasts can continue working in the bottle, creating the renowned bubbles that give this natural sparkling wine its distinct touch. Finally, Raúl Moreno Alba y Barro is left to rest horizontally for nine months until the moment of disgorging. This process, in which the dead lees are removed, is done manually.
