It is the most intimate and cherished gem of this historic Tuscan winery, a tribute to its origins and the first vineyards discovered by John Dunkley and Palmina Abbagnano when they left London for the hills of Chianti. These vineyards, the oldest on the estate, are the heart of the project and the foundation of this exceptional wine.
The production follows a meticulous process, respectful of both the grape and time. After a manual selection in the vineyard, the clusters are inspected one by one on the vibrating table. Some are destemmed, others are left whole, and all are placed into concrete tanks, where the magic begins. For several days, the must rests, awaiting the spontaneous onset of fermentation.
From there, the yeast sets the pace. The wine ferments slowly over 15 to 20 days, and then, instead of rushing, is left in contact with the skins for an additional month. This extended maceration imparts depth, character, and an enveloping texture.
But Riecine is in no hurry. The wine is transferred again to concrete, where it ages for 36 months. No wood. Nothing to distract the sangiovese from expressing its true essence. After this lengthy repose, it naturally stabilises, also in concrete, and is finally bottled where it rests for another six months before reaching the market.
