Now, after several ups and downs, this region and its wines are once again well-recognised and delighting experts. This new era is thanks to local figures like Samuel Billaud who have made great wines.
You will likely have heard this name because the Billaud family is one of the best known in the area. They all worked at Simon-Billaud until 2009 when Samuel decided to go his own way. At the beginning, he started making his own wines from the grapes he bought from local winegrowers. Now a little more time has passed, he complements these grapes with his own 4-hectare vineyard all within the A.O.C. Chablis Premier Cru, where he makes his wines. One of those wines is Samuel Billaud Chablis 1er Cru Les Vaillons Vieilles Vignes.
As the name suggests, Samuel Billaud Chablis 1er Cru Les Vaillons Vieilles Vignes is a single-variety Chardonnay white wine, which comes from the old vines that Samuel cultivates in Les Vaillons (on the left bank of the Serein River). In this area the soil is limestone and clay, and very cold, with the vines growing in very extreme conditions. Sometimes it is even necessary to help the plant during winter frosts by setting up heaters or using spraying techniques (where the vines are sprayed with water that freezes and forms a protective layer that keeps the temperature at 0°C).
The Samuel Billaud Chablis 1er Cru Les Vaillons Vieilles Vignes vinification process begins with the pressing of the grapes. The clusters will have already been selected in the vineyard itself, and the grapes are harvested by hand. After these gentle pressings, the Samuel Billaud Chablis 1er Cru Les Vaillons Vieilles Vignes must is made, which then spends 24 hours at rest, at low temperatures, being cleansed of undesirable substances. This is known as racking. Once finished, and with the must as clean as possible, Samuel Billaud Chablis 1er Cru Les Vaillons Vieilles Vignes is racked into barrels (where fermentation will begin). The wines are made separately, depending on each plot, always leaving the wine in contact with the lees.
