Pinotage is a classic South African variety. It first emerged in this country in 1925 and is now the second most widely planted grape, producing very aromatic, elegant and velvety wines. It was discovered by Abraham Perold, professor of viticulture at the University of Stellenbosch, who was encouraged to cross Pinot Noir with Cinsaut (known in the country as Hermitage). The result was a grape with good ripening and that suited the climate, with no health problems, that reached a high sugar level and the benefits of both varieties: the elegance of the Pinot Noir and the strength of the Hermitage.
All in all, it was a win-win situation. And these excellent qualities were enjoyed for years, until the end of apartheid (in the early 1990s), when the country opened up to the world and many producers decided to cultivate other, more international varieties. Fortunately, this trend is now changing, and new winegrowers are once again choosing this variety, which produces fine, delicious wines with high alcohol content (between 14%-15%).
One example of this is Saxenburg, the winery that produces Saxenburg Private Collection Pinotage, a red wine made with this variety that comes directly from the Polkadraai Hills area in the Stellenbosch region. This estate, run by the Bührer family since 1989, is one of the oldest in the area (founded in 1693). Here, in a west-facing block, the grapes have been grown to make this wine, which has a special feature: it will only reach 13% alcohol. This is because the grapes are harvested early, just when they reach their optimum ripeness, without allowing their water content to decrease or their sugar content to increase.
The vinification process is led by Dirk van Zyl. In the winery, the grapes are destemmed and placed in stainless steel tanks, where they ferment in open vats. During this process, the most important thing is to prevent the tannins, which are plentiful in the Pinotage, from passing into the wine. To do that, daily pumping over will be very gentle and pressing after devatting will be quick. Finally, Saxenburg Private Collection Pinotage is aged for 12 months in French oak barrels on their third and fourth uses, without racking or clarifying.
