Shannon Capall Bán, named after the peak of the mountain range just above the vineyards, is a Bordeaux-style white wine crafted from sauvignon blanc and semillón varieties. The grapes —from Bordeaux-origin clones— are hand-harvested, chilled to 3°C, and handled with utmost care: gravity racking, separate fermentations in new and old French oak barrels, and maturation on lees that adds texture, depth, and distinction. The semillón reveals an intriguing, almost mystical nose: musky notes intertwining ginger, quinine, lime zest, and cardamom, all underpinned by a stony minerality.
